This beer pours a dark brown colour with a light, creamy head of foam. A moderate haze is apparent, derived from the huge malt bill and massive late dry hop additions to the fermenter.
Swirling the glass, you will smell an assortment of flavours. Most prominently, the robust biscuit/toffee notes accompanied by the sweet ocean brine. A subtle zesty citrus follows from the fresh Albany limes.
This is a full-bodied beer, with a silky, luscious mouthfeel attributed from the Akoya Pearl Oysters Nacre. The interaction between the Akoya shell and boiling wort really showcase the complex malt bill. Cocoa, toffee and biscuit flavours are present with a sea salt brine from the West Australian waters.
This beer has a moderate bitterness that is balanced with the malt and appears at the end of the tasting process. The acid from the lime addition cuts through the heaviness of the salt leaving the hop characteristics to shine through.
